The Constellation Collection

The Dalmore 1981 (cask no. 4)

This whisky spent 26 long years maturing in the deepest darkest warehouses at The Dalmore distillery. Over this time, the American white oak cask has gifted the spirit with its soul; a backbone of vanilla and honey.

After this initial maturation, the spirit was then transferred into a butt which has previously contained Amoroso oloroso sherry from the renowned González Byass bodega. Over a period of four years, whispers of cherry, plum and mandarin were gifted by the cask to create a perfectly balanced, sensual whisky

Volume: 70cl ABV: X

The Flavour Profile

The Colour

Dark amber gold with glittering hints of honey

The Nose

Warm seductive aromas of honeyed pear and milk chocolate are followed by scents of crushed almonds, citrus fruits, bergamot and warm berries

The Taste

Whispers of cherry, plum then mandarin give way to freshly baked bread, caramelised peaches and apricots

This whisky has accentuated flavours of caramelised peaches, apricots and freshly baked bread which I find delightful on the palate. It is also perfectly balanced which is why I wished for it to be part of this collection
