The Dalmore CASK CURATION SERIES

The fourth chapter in the Cask Curation Series, The Maderia Wine Cask Edition, comprises three exquisite and exceptionally rare whiskies matured in three different styles of Madeira wine pipes - Terrantez, Bual and Malvasia.

This edition showcases the influence of Madeira wine casks sourced from Blandy’s historic lodge in Funchal, perfectly harmonising with our signature style of chocolate, orange, and spice, to create a whisky of remarkable depth and distinction.

Terrantez, one of the world’s rarest grape varieties, brings a vibrant citrus lift and aromatic spice, Bual contributes warmth and layered complexity, and Malvasia deepens with a profound richness and texture. Together, these casks reveal the remarkable influence of Madeira wine, creating the ultimate Madeira finish.

The Cask Curation Series Sherry Cask Edition is a celebration of the influence Sherry casks can have on our spirit, and the very special relationship between The Dalmore and González Byass. The long-standing partnership between the winemakers of González Byass and the whisky makers at The Dalmore can be traced back for over a century.

Matusalem casks have previously held Oloroso Sherry and provide rich, sweet flavours of dark cherries, Old English marmalade, marzipan and liquorice in complement to The Dalmore’s signature style. Vintage Sherry casks, a genuine rarity in the world of Sherry, previously held wine from a single harvest which was matured individually, rather than in a Solera system, and provide our whisky with exotic flavours of mandarin citrus, sugared almonds and freshly baked brioche. Apostoles' casks have previously held unique Apostoles Sherry and help to impart a sweet balsamic character while revealing notes of Madagascan vanilla, dark forest fruits, dark chocolate and cinnamon as The Dalmore whisky matures.

Thanks to an enduring partnership and genuine friendship with the Symington family over several generations, The Dalmore enjoys exclusive access to the rarest of Graham’s Tawny Port pipes.

This multi-layered approach to Port cask finishing beautifully enhances The Dalmore’s signature notes of chocolate, spice and orange - introducing warm, velvety, and inviting flavours that range from cacao and red liquorice to rich berry notes, creating expressions of remarkable depth and complexity.

The third chapter in the Cask Curation Series, The Red Wine Cask Edition, comprises three exquisite and exceptionally rare whiskies matured in Matusalem Oloroso sherry casks and finished in 2023 Châteauneuf-du-Pape wine casks from Château Mont-Redon.

This approach perfectly illustrates how the same three red wine casks can enhance three whiskies of differing ages, demonstrating how the flavours imparted can complement and enhance our signature chocolate, orange and spice character.

Château Mont-Redon produces full-bodied, elegant red and white wines with intense flavour and character using traditional grape varieties for the appellation, including Grenache, Syrah, Mourvèdre, and Cinsault. These exquisite casks, typically made from French oak, bring out flavours of red berries, stone fruits and earthy undertones in The Dalmore whisky.
