The Constellation Collection

The Dalmore 1991 (cask no. 1)

The elegant backbone of this whisky has been defined by its 11 year slumber in the finest American white oak cask.

Only when the time was right did our Master Distiller awaken the spirit and lovingly transfer it into an exquisite Lepanto brandy cask. Here the whisky was gifted with tantalising notes of grapefruit, crushed almonds and caramel fudge.

After six years, it was transferred into a distillery run bourbon cask for its final refinement, completing this whisky’s wonderful flavours.

The Flavour Profile

The Colour

Radiating with flashing yellow light and gold

The Nose

Cinnamon spice, marzipan, nutmeg and Cuban cigars give way to peaches, apples, damsons and pears. Whispers of hazelnuts, Morello cherries, pineapple and Parma ham follow

The Taste

– Brandy grapefruit, banana fritters, crushed almonds and gazpacho andaluz, with fresh layers of sultanas, caramel fudge, fig cake and mulled wine

As soon as I assessed this whisky it immediately took me back to my visits to the González Byass bodega in Spain. The spectrum of flavourful delights found in this whisky reminded me of the days where I sat with the sherry Master Blender and sipped phenomenal sherry whilst enjoying the refreshingly cool Andalusian Gazpacho
