The Constellation Collection

The Dalmore 1979 (cask no. 594)

The Dalmore 1979 has spent 33 long years slumbering in warehouse no. 9.

Over that time it has been nurtured by a commanding hogshead made from the world’s most outstanding oak, Quercus Alba from the Ozark mountain range of Missouri. This has been the perfect protector, allowing the whisky to develop at its own pace and impart enticing notes of apples, peaches and lemongrass.

It is an outstanding example of how time and cask selection can work together to create an exhilarating whisky.

Volume: 70cl ABV: X

The Flavour Profile

The Colour

Shimmering honeyed gold

The Nose

Honey, peaches, nectarines and vanilla ice cream. Followed by notes of fresh apple, pear, apricots and lemongrass

The Taste

Spicy pineapple, tropical fruit salad and caramel fudge with flashes of lemon cake, frangipane, rose hip syrup and macaroons. Followed by Bramley apples with peaches and cream, Turkish delight, spiced sherbet and kiwi fruits

When I assessed this whisky it quickly became apparent that the cask had gifted it with abundant and delicious notes of kiwi fruit, Turkish delight, lemongrass and bramley apples. A real shining star that I simply had to showcase within the collection
