This whisky has spent 32 long years maturing in a handcrafted European oak Quercus Robur sherry cask from the renowned bodega of González Byass.

Volume: 70cl ABV: X

The Flavour Profile

The Colour

Copper black toffee with an aurora of amber gold

The Nose

Notes of allspice, rolling tobacco, pear drops and espresso coffee give way to dark fruits, sweet black treacle, marmalade, cracked pepper and rich sultanas

The Taste

Toasted pistachios, ginger syrup, moist fig cake and Seville oranges, tempered by vanilla, bitter chocolate, pecan pie and liquorice. Muscatel, nutty toffee, Demerara sugar and caramelised pineapple provide the perfect aftertaste

I assess each of my whiskies many times over the course of their journey and it has been apparent from the very beginning that this spirit has been extremely happy and content within this European oak sherry cask. For this reason, I decided to keep it in this cask for its full maturation before releasing it into the collection
