Under the watchful eye of our Master Distiller, the liquid is initially matured in American white oak ex-bourbon casks for 29 years. This gives its first base of soft vanilla and honey notes.

The final character of the whisky is derived from its maturation in casks which have previously contained 30 year old Matusalem oloroso sherry, one of the world’s most celebrated fortified wines. The Dalmore has exclusive rights to these precious casks that are hand sourced from the world renowned González Byass bodega.

After four years, the sherry has gifted the whisky with a beautiful balance and richness that can only be achieved using these exquisite casks.

The Flavour Profile

The Colour

Rich radiant mahogany gold with sandy highlights

The Nose

Baked apples, caramelised pear, over ripe apricots, Czar plums and clementines, accentuated by hints of creamy vanilla, dried figs, milk chocolate, orange peel, pineapple and coconut

The Taste

Moist lemon cake, juicy dates, persimmons and almonds, before flavours of fleshy Doyenne du Comice pear, peach and mangos

This whisky has unusual notes of peach, mango and tropical fruits. I selected this cask for the collection as it showcases a different side of The Dalmore.
